My salad obsession is not visible to many. Apparently I enjoy a bowl of leaves than a bowl of chocolate ice-cream (I can easily pass the chocolate icecream but not a chocolate mousse cake). I am not a health nut nor a vegan, but I love salads. My favorite style is making something sweet and sour with different textures and colors.
Another thing I love is food styling and try to make unique platters of food keeping it neat and simple. I am trying to learn gourmet art and styling using real food. I have an obsession with serving plates and cute cutleries! I splurge on different colored plates and cute little bowls and jars. I go by the rule that even the garnish should relate to the dish and should be edible. I hate leftovers on a plate and so design food keeping in mind the flavor combinations. This is one of my recent food styling. I love avocados and just thought how I would serve an avocado deconstructed and enjoy eating it with healthy accompaniments.
I used to have a big kitchen up until last March when we had to shift to the city and rent out an apartment that has a tiny kitchen. I used to bake a lot back in the days when I was not blogging. I tried decorating cake, making elaborate dinners, changing the order of the crockeries that were on the shelf and trying out new recipes. Fast forward to December and I am here writing this post thinking of something easy to make for dinner tonight. I hate spending time in the new kitchen. So I try to come up with quick and filling recipes. I mostly make salads and one pot meals because frankly I can get things done fast.
The salad recipe is super simple but really flavorful. We eat this everyday and I can assure you of the gut happiness. You will be amazed at the beauty of nature’s colors in your plate. There is no cheese or grains or nuts but still has crunchy and soft bites. The citrus and berry flavors with the mango and peppers really make the salad a complex flavor in spite of the simple ingredients.
There is no cooking involved. Just some chopping and preparing the dressing. So here goes the recipe;
You will need
Parsley – a big bunch finely chopped
Mango – 1/2 cup finely chopped
Red/ Yellow Pepper – 1/2 cup finely chopped
Tomato – 1/2 cup finely chopped (remove seeds)
Cucumber – 1 finely chopped
Strawberries – 1/2 cup cut into chunks
Pomegranate seeds – 1/2 cup
Avocado – half, chopped into 1″ pieces
Freshly squeezed orange juice – 2 tbsp
Brown sugar – 1 tsp
How to assemble
1.Combine all the salad ingredients in a mixing bowl.
2. Make the dressing by adding the brown sugar into the orange juice. The sugar will dissolve and pour this into the bowl with the veggies.
3. Add salt and serve immediately.
Hope you enjoy the tropical flavors. This is a recipe best made during summer when the berries and mangoes are in abundance. As we get these all round the year in Doha it is an all year round recipe for me.
