I love making salads for dinner. I love salads and I take my salads pretty serious. I am not a big fan of salads with meat. My favorite of all leaves is the arugula/rocket salad.
I came across a video that inspired me to make this salad recipe. I have added pistachio to the recipe and its amazing. The crunch with the spicy, sweet and sour flavors take this salad to a whole new level. Mr. M approved the dish with a huge thumbs up.
Here is the recipe;
What you need:
Avocado – 1 diced
Mango – 1 diced
Cilantro leaves – finely chopped
Pistachios – 10 cut into small bits
For the dressing;
Lemon juice – 3/4 tbsp
Brown sugar – 1 tsp
White Pepper powder – a pinch
Salt – pinch
Tabasco sauce – 1 tsp
1. Add the brown sugar to the lemon juice and wait till it is completely dissolved.
2. Meanwhile dice up the avocados and mangoes and finely chop the cilantro.
3. Add rest of the dressing ingredients to the lemon juice and brown sugar mixture. Add the avocados and mangoes and coat them well. Sprinkle chopped cilantro and pistachios. Mix everything well together.
This salad is creamy, spicy and sweet. The pistachios add a beautiful crunch and can be eaten on its own.
